Anyone eat hummus?

l've been on a hummus kick lately also. my lunch for the past couple days has been a quickie hummus pizza using flat bread, hummus, diced mushrooms and tomatoes and topped with alfalfa sprouts. l toast everything together, then top with avocado chunks. YUM!

Short of the divine goodness that is falafel, my second favorite use for hummus is in spinach pie filling. I use thawed, frozen spinach, lemon juice, pepper and add enough hummus to make a paste. It's much better than cheesy fillings, in my opinion.

hummus with veggies, pita, flatbread, as a spread on a sandwich. I love tempeh-lettuce-tomato sandwiches with spicy hummus! mmm.

I just tried spreading jalepeno cilantro hummus on my burger buns.. DELISH!!

My favorite use for hummus is on my bagels in the morning, or toast.

My mom makes this sort of stir-fry with onions, bell peppers, garlic, tomatoes, black beans and ginger and stuffs all of it into pita bread smeared on the inside with HUMMUS. ahh I'm getting hungry thinking about it. She makes it with chicken but I'm sure it would still be amazing without.
