This recipe is making me drool already. I <3 this stuff so much.
I found the recipe in magazine, don't quote me on it but I believe it was Fitness.

MAKE SURE YOU USE RIPE PEACHES!
30 minutes to make, +time to freeze
6-ish servings

3 lbs peeled peaches, pitted
1/4-1/2 cup sugar (to taste)
1/2 cup mascarpone (can use creme fraiche or yogurt=what I use)

Cut peaches into very small pieces. The smaller, the finer your final texture will be. Arrange pieces on a single layer baking sheet and freeze for about 2 hours.
O\Put frozen pieces in a food processor/blender with the sugar and grind. Add your mascarpone (or substitute) and pulse until smooth. Empty in a small container and freeze of another 30 minutes, serve.

This looks really good!  I'm so excited that it doesn't require an ice cream maker.  I wonder if I could use nectarines...or strawberries...  Do you use plain yogurt?  Or vanilla?  Or fruit flavored?  And what happens if you freeze it for more than half an hour?

I think you can deffinitely use whatever fruit you want. The recipe used peaches so that is all I have used so far.
I've used plain and vanilla yogurt. they are both good, vanilla is a tiny bit sweeter.
Freeze as long as you want to! It lasts a while!

I just made this and it's AWESOME.  Mine made a lot, I'd say at least 8 cups.  I didn't measure the peaches exactly -- there was a stall at the farmers' market that was selling overripe peaches, $1 for a bucket of about 5 lb, and I used about 3/4 of it.  Maybe 12-13 peaches total, but I had to cut away a lot of bruised spots, so I'll count it as 9.  Wink  I used 1/3 cup sugar and a 6oz container of nonfat plain yogurt.  I think it was too much for my food processor, so I ended up blending it in batches.  I used 1/3 of the peaches, 1/2 of the sugar, and 1/2 of the yogurt in each of the first 2 batches.  Then I stirred in the final 1/3 of the chopped frozen peaches to give it a little more texture.  I am so excited for this!  (Thanks again for posting caffeine-fiend!)

I dug this post up out of a search for recipes with peaches!  We just moved to a house with a peach tree in the backyard, and I thought I'd better find something else to do with them besides, y'know, pie.  So I made this gelato today with about five medium peaches, a white nectarine, a bunch of strawberries and yogurt instead of marscapone, and it was FABULOUS.  Even my husband likes it, and he doesn't usually like a) peaches or b) yogurt!  Thanks for the awesome recipe Smiley
