I had over half of a turkey tenderloin leftover from dinner one day so I came up with this to eat in pita bread or wrapped in tortillas (I used the spinach kind). Sorry if my measurements are a bit off but I just kind of threw everything in a bowl.

1 1/2 C. finely chopped turkey tenderloin (or shredded)
2 avocados
1/2 C. crumbled slivered almonds (I used Almond Accents for salads)
2 (heaping) TBS. Mayo or Miracle Whip
1 small onion finely diced
1/2 C. finely chopped cilantro (optional. I just had some I had to use but I've made it without as well)
Crushed Red Pepper to taste
Salt & Pepper to taste
Salad Seasoning to taste

1. Cut avocados in half. Remove pit and scoop out into a large bowl. Mash them to desired consistency (I don't like mine real chunky).

2. Add turkey, onion, mayo, almonds and cilantro and mix together.

3. Add desired spices (Those are the three I recommend).

4. Spoon into tortilla or pita.

5. ENJOY!!!

This sounds yummy but I don't usually cook turkey. I really like turkey though so I'll probably try this with deli turkey. Thanks for the idea! I love things in pitas too.
