I took some of the leftover veggies from last night (I made a ginormous pan so I could use them for a few meals) and turned it into a yummy strata that will be tonight's dinner. I didn't have any great bread to use, so after thinking about it I broiled both sides of 3 onion buns and used that. Along with some sausage, green onions, Irish cheddar cheese, 6 eggs, and a little cream and reduced cream cheese I made something freaking delicious! (not low cal though, next time I'll make this I'll use egg beaters, less meat, milk, reduced cream cheese and less cheese but today I just wanted comfort food).

I pretty much followed this recipe, halving it and using my already cooked veggies for the veggie part:

Steak is marinating in Italian dressing now, that will be grilled with some zucchini wedges, and Annie's white cheddar mac & cheese with peas, chopped baby carrots and broccoli. Sliced peaches & green grapes for dessert. I'm trying to get lets of fruits &  veggies into our diet.

Yesterday was steak skewers with zucchini, tomatoes, red peppers, and couscous. On the BBQ.  My lovely hubby-to-be braved the thunder to make me supper Smiley

i made teriyaki pork the other night, was very good, ate it with rice noodles and steamed green veg

I'm making some cleaning out the fridge stew! Incorporating cooked veggies and cooked potatoes I have in there (not adding until the end) and some broth and an onion gravy. Hopefully it doesn't suck!

Yesterday we had a cookout so it was burgers & hot dogs off grill, amazing beefsteak tomatoes with balsamic dressing, banana nut muffins, baked beans with lots of turkey bacon, potato salad, fruit salad, tortellini salad and desert was blackberry & peach pies.  Oh and cookies too ... way too much food. so leftovers for lunches for next few days  =)

Tonight is beef & gravy (what we called it growing up) throw a can of tomato soup in crockpot, a little water to rinse can, toss in a beef roast, several dashes of Worcester sauce and several pinches of Tastefully Simple garlic garlic. Roll roast around a bit to make sure it is all covered with tomatoey goodness. cook on low for a few hrs. last hour of cooking time add 1 can diced tomatoes & a few shakes of dried parsley. Serve over cooked noodles or rice with a green salad on the side. =D  super simple & tasty. left over roast is tender & tasty, great shredded fir sandwiches.

I'm roasting a chicken (with fresh sage and lemon lavender salt stuffed in it's empty innards and placed under the skin) And I'll make some garden potatoes and a salad.  and if I don't over stuff myself on all that, I'm going to have blueberries and apricots with cottage cheese for desert Smiley

last night we had buffalo chicken salads (grilled chicken breast basted with buffalo wing sauce, Romain & baby spinach, banana pepper rings, tomatoes, shredded carrot & balsamic vinegar dressing   with garlic bread. Watermelon & peaches for dessert.

Tonight crock pot chili, corn bread & fruit salad
