Last two nights we were all at mam's so Friday night we had pesto pasta; pasta, chunks of chicken breast green beans, sun dried tomato and a jar of green pesto
it's so simple but sooooooo good, sometimes we have peas in it too, but my brother leaves them and my boyfriend leaves the tomatoes, silly boys
then last night was chorizzo bake with the first of mam's home grown potatoes; potatos, onions, chorizzo and some chicken stock, bung it in the oven and forget about it for a while
sometimes we have bell peppers in it too, but only when we have them going spare

Selnith: your pesto dish is a favorite here!!  Tasty!!

The other night I browned some chicken sausage in the wok, pulled out sausage & filled wok with boiling water from electric tea kettle. boiled up 3 hand fulls of bow tie pasta. In last 2 minutes of cooking I tossed in frozen peas, diced carrot, chopped fresh broccoli. I reserved a ladle full of cooking liquid, drained pasta. Put sausage & pasta mix back in wok added cooking liquid, a few ounces of half & half. Added some minced garlic and onion powder & fresh grated romano cheese. I had about equal parts veggies & pasta. Was very tasty!!!  filling, but not heavy.

That sounds awesome JulieML! I've been thinking about doing some kind of chicken sausage and whole wheat pasta dish, yum!

Tonight dinner will be tuna melts, with veggie pasta salad. Cherries & grapes for dessert. simple & tasty.

Homemade chinese smorgasbord! And... it's taking forever to make. But, I'm super excited about it. We're making kung pao chicken, fried won tons (with lots of leftovers to stock the freezer) and eggplant fritters. Oh, and rice.

Ooh what's an eggplant fritter? I love eggplant!

The recipe is from Land of Plenty. You take eggplant and stuff it with a ground pork mixture. Then you batter them and deep fry. To eat it, you dip it in ground Sichuan pepper and a little salt. It was really good!
