This is what I made tonight from Rachael Ray:

Portobello Medallions au Poivre.  Even though I couldn't find Brine Packed Peppercorns in my friggin' small town, it was SOOOOOOO yummy! We just had buttered noodles on the side that we ended up spooning the extra sauce over.

That sounds delicious and fancy! I had vegetable soup from a recipe I found here on Craftster...a bag of frozen veggies, a big can of diced tomatoes, chicken broth, and rice. I actually made it last week and have been eating out of the crockpot since! Tonight I added some shredded mozzarella cheese--delish.

I made a yummy gluten free chicken, pasta, and spinach casserole. I should take pics and post it here, I was quite impressed with myself (also with the brand of gf pasta I bought, I've had some icky ones before)

Pasta and Cannellini bean soup with whole wheat penne, tomatoes, and fresh spinach.  It was delicious.  I used Rotel instead of regular tomatoes, rosemary, and garlic.  The best part is that it makes very good leftovers, so I have lunch today and dinner tomorrow as well.

Chana masaala with quinoa.  My friend's mom's recipe, which is always delightful.  Quinoa because I'm too lazy to make capathi and I'm getting low on rice.  Indian/Peruvian fusion tonight Tongue.

Last night we had pasta tossed with roasted broccoli and walnuts. Tonight we're going to have black bean soup.

Crunchy Chicken tenders, salad, oven baked potato wedges, and grapefruit.

I've never made homemade chicken tenders before and they were delicious.  The salad had red leaf lettuce, cucs, mushrooms, carrots, and red cabbage.
