Last nights dinner was Sausage + Bean Casserole with mashed potatoes and cabbage, it was delish.

Tonights is, I'm not sure what. I'm going over to my friends house so I'll either have dinner there or whip something before I head out the door.

Well, it's kind of a tradition for us to eat white rice with every meal, so sometimes I get tired of it. I've never tried brown rice before...ever.

If you sub out half or even all the water for stock when you're cooking your brown rice it will definately improve the flavor. I also add a pinch of crushed red pepper flakes to the brown rice while it's cooking for extra kick. I happen to like brown rice over white rice personally. It has a firmer texture that I like. The texture is even better if you melt butter in the pot first and lightly toast the rice until it's translucent before you add the water/stock.

I want to try to make some sort of Eggplant parmesian but we'll see. I have to find a good recipe. Does anyone know of any?

For dinner last night, we had spicy mushroom flavored soup with ramen noodles with a fried egg on the side. Watermelon for dessert.
