Tonight I'm making Mark Bittman's Almost Meatless Sloppy Joes. They use only 6 oz. of meat and lots of veggies and beans to fill it out. Yum!

went camping at the weekend, i made jambalaya for supper on sunday night, fabulous one pot dish, was really glad i took ingredients to make lots because it ended up feeding me, my BF, my bro, my other bro, my SIL, my mam, dad, cousin and two of her kids
and many had seconds (including both kids, age 7&Cool so yea, i think i did good
for protein i used some smoked sausage because it didn't need to be refrigerated while cooking

I made Chicken Tortilla Soup with garlic bread rounds from a homemade dinner roll.  It's from Mark Bittman's cooking calender. My non tomato boyfriend liked it too.  Smiley

We had pasta with prosciutto and peas. It was really yummy, but the cream sauce was way more filling than I thought it would be.

I made roast chicken with fresh herbs, onions and lemons. With white beans in tomato sauce, grilled corn and chibatta bread. And I'm making cheerio marshmallow squares (I'm outa rice crispies and I want treats!) Can you tell I'm PMSing? I want to eat it all!

We had Sloppy Joe-D's.  I call 'em that because instead of ketchup, I use tomato paste and soy sauce and very very little sugar.  Hubby hates "sweet meat" so I have to avoid sugar in my entrees....  They were pretty darn good though!  know to see if I can sneak a can of beans and molasses in there next time......
