Okay, so I stole this idea from a forum I lurk at, but I think it would be fun to share what we're for having for dinner and perhaps share some recipes.

Tonight we're having veggie soup. Celery, tomatoes, potatoes, onions...Very healthy and very yummy.

What are you having for dinner? Wink

I have a pork shoulder cooking in the crock pot and we are going to have shredded pork tacos with cheese and sour cream.

I threw a roast in the crockpot this morning with some BBQ sauce, so I'll shred it up for sandwiches.  Not sure about sides, though.

I'm pretty simple in the summer. I'm having pan-seared asparagus with lemon zest, roasted new potatoes, and a bit of broiled walleye. It's all been cooked already. I cook once a week.

when i got home last night my mom had made some sort of stew with steak, potatoes, and carrots...which very much resembles the vegetable soup she made the night before. only the broth tastes more meaty than tomatoey.

oh but BEFORE i came home, i ate dinner with my friends, whose mother made a enchalada chili cheese casserole, with a dip that consisted of tomatoes, corn, and kidney beans. it was really good, but i think black beans would have made it even better.

it was a nice change, for the past few nights i've just been fixing myself a can of green beans, which i prepare with a splash of olive oil, a splash of soy sauce, and lots of black pepper, garlic powder, and parmasean cheese. yum-o!

Tonight we are having mini pasta shells with pesto sauce and parmesan crusted chicken tenders. Maybe I'll make some sourdough garlic bread if I remember.
