Personally, I've been addicted for a very long time.  When I go out my favorite fillings are avacado, ume, squash and mushroom. 

I make it at home too and have used such interesting combinations as "avacado and bannana," "smoked tofu" and "tempe, veganaise and scallion." 

Does anyone have other suggetions?  Also, if anyone knows how to make the cooked squash roll, that would be awsome (the squash I am talking about is sweet and kind of chewy...not battered and potato like)...

I really like cucumber and yam. I don't have a lot of experience though - I tend to lean more towards anything with roe on it  Cheesy

Hi there,

The squash that you're looking for is called kampyo or kanpyo.  It's strips of dried gourd.  I don't personally like it so I don't have any cooking tips.  You should be able to get it from an Asian market, and I know that you have to soak it before you can use it.

My favorite is mashed cooked sweet potato spread with a thin layer of spicy mayo (Vegenaise, cayenne pepper, minced scallion, and a little bit of lemon juice).  But I also love (alone or in combo): carrots, avocado, cucumber, smoked tofu, thinly sliced inari wrappers, asparagus, marinated shiitake mushrooms...and probably more that I'm not remembering Smiley  And now I'm hungry!

My favorite sushi place made a delicious roll that had a thin slice of radish, a piece of sauted shitake mushroom all wrapped up in a thin sheet of yam tempura.   I wish i still lived in that city, if only for that roll.

I've recently become apart of the extra special sushi eating club and I love it. lol I really like avocado and red pepper sushi, and any sushi with cucumber.

I love veggie sushi!  Smiley  I was so intimidated to try making it at first, but once I got started I found it was super easy. And it's so cheap once you buy all the basics.

I usually stick to cucumber, carrot and avacado.  I'd like to try tofu someday.
