i can't get over the fact that i threw this stuff together and it came out so wonderfully delicious.  Smiley
i didn't measure exactly, but i'm guessing you couldn't go too far wrong...i used

1 cup bisquick
1 cup chunky applesauce
cinnamon and nutmeg to taste
2 tbls brown sugar
2 tblsp butter
grease bottom of loaf pan with the butter, then put the rest cut into small pieces in the bottom of a loaf pan--cover with the couple tablespoons of brown sugar.
mix applesauce and bisquick in a bowl--throw in some cinnamon and whatever spices you like to make a thick mixture between a dough and a batter...if your applesauce is wetter and less chunky, throw in some extra bisquick to get to the right consistency.
pour into baking dish on top of butter and brown sugar--bake in 350 oven until lightly browned on top and cooked through to clean toothpick state.

that's it!  it's good warm or cold.  i just made some and made homemade butterscotch pudding to put on top and it was fancy and amazing.  make a coffee cake for your pal in the morning with no effort!  Smiley

I love apples and cinnamon.
