Here is one of the easter goodies that I made:



Here is the recipie. It is soooooooo good:
1 16oz can crushed pineapple
1c pecans
3c shredded carrots
2c sugar (I used splenda since the pineapple and carrots are packed with sugar)
1tsp baking powder
1tsp cinnamon
2c flour
2tsp baking soda
1/2tsp salt
4 eggs
1 1/2tsp vanilla

Mix all together and bake at 350 in a greased and floured 9x13 for 30-40 minutes. I used two 8" circular pans and they were done in about 20-25 minutes. I frosted with cream cheese icing, I cheated and used Betty Crocker. I felt guilty because I didnt make it home made like I usually do so I went all crazy with the icing tips. It is incredibally moist and yummy!
