Thought I'd share another great muffin recipe, that's really quick and easy to make and never fails to impress or satisfy a hunger pang!

Lemon Poppy seed muffins:

8oz self raising flour
6oz granulated sugar
1oz poppy seeds
zest of one lemon
5 fluid oz milk
5 fluid oz vegetable oil
1 egg
juice of half lemon

Lemon Drizzle topping:

2 tablesppons sugar
juice one lemon

Simply mix together and pour into muffin cases and bake.
Once cooled, make the lemon drizzle topping then pour over and allow to set.
Enjoy!

I haven't found a precise time for how long to cook them as it seems to differ every time I make them!

I cook them in a pre-heated oven at 200 and check on them until they've risen, have a firm top and a knife comes out clean when dipped inside (roughly 20 mins depending on the oven/size of cakes etc)

have you ever tried them without the poppy seeds?  i just can't seem to find them at the store... any suggestions would be welcome.

Hi,
Without poppyseeds would be just as nice! I only use them to try and be healthy and it helps disguise the taste for kids!
