My favorite is chocolate peanut butter no bake pie!
Ingredients:
two 12.3 ounce boxes of silken tofu
12 ounces nondairy chocolate chips
3tablespoons maple syrup
1 teaspoon vanilla extract

1 cup peanut butter
one premade pie crust
------
1. blend the contents of both boxes of tofu in a blender or food processor until smooth
2.melt the chocolate chips in a double boiler, when they are melted add them to the tofu mixture in the blender and blend until everything is mixed
3.Add the 3tablespoons maple syrup, the 1teaspoon vanilla extract to the chocolate tofu mixture and blend until everything is mixed.
4.For the crust:
Spread the one cup of peanut butter on the bottom of the premade (Vegan) pie crust.
5. add the chocolate tofu mixture to the pie crust and chill until ready to serve (i like to let it chill overnight and have some the next day, letting it sit gives the tofu time to firm up and tastes great!)

Grilled peaches or bananas sprinkled with walnuts and maple syrup.
Okay - now I'm going to have to go make some.
Lemon un-merangued pie is also sounding good right now.

my newest favourite is the chai cupcakes from the Vegan with a Vengeance cookbook (i think). they were so good!!!

Chai Cupcakes/ Cake

1 cup soy or rice milk
4 black tea bags
cup canola oil
cup soyogurt
cup sugar
1 tsp vanilla
1 1/3 cup flour
tsp baking soda
tsp baking powder
tsp salt
2 tsp cinnamon
1 tsp cardamom
tsp ginger
tsp cloves
pinch of black pepper

Icing glaze:
2 Tbsp margarine
1 cup powdered sugar
2 Tbsp rice milk
1/8 tsp cardamom
drop of vanilla extract

heat the soymilk with the tea bags. remove from heat and let sit 10 minutes. mix together the oil, yogurt, sugar, vanilla, tea mixture. sift in the flour baking powder, baking soda and spices into the wet. bake for 20-22 minutes at 375 F

Avocado Silk Pies are great.

It's really easy.

2 large soft avocados
2 cups dark chocolate or carob chips
1/8 cup non-dairy milk (more if needed)
1 T vanilla extract
liquid sweetener, add as much as you want depending on taste
pre-made pie crust (I use graham cracker)
raspberries
1 T orange juice

Take a pre made crust and lay washed and dried raspberries along bottom of crust.

In a double broiler melt chocolate chips with milk and vanilla. Add sweetener to taste. Mix well, and take off from heat after fully melted so that it does not burn.

In a separate bowl mash up the avocado, or pulse in a food processor. Add in orange juice, Get all lumps out.

After chocolate cools a bit mix it in with mashed avocado. This mixture should be thick and creamy. Test the sweetness level.

Pour over raspberries and place in fridge to set.

Not so much a recipe,  but more an idea, that I just made and is totally yummy!

Almond cake with marzipan layer and cherries.

Need:
1 basic cake mix recipe
-I used the golden vanilla cupcakes from VCTOW, but I only used 1/2 cup of sugar..and actually think 1/3d or even 1/4th would be fine as well.
And I added an extra teaspoon of almond extract.

marzipan

Cherry pie filling (make your own with some sugar, cherries and cornstarch or use canned)





Bake the cake recipe in a large tin (the cake layer has to be quite thin, so it won't be more than half or one third a thumb high when baked.. sorry for being vague heh).

Take it out of the oven.

Then get out the marzipan and roll it into a ball... then roll it out (in between waxed paper or over a smooth surface sprinkled with powdered sugar so it won't stick) so you get a circle that's big enough to cover the top of the cake and about 1-1 1/2 mm thick.


Place in the oven again and bake for another 5-7 minutes.

Meanwhile, prepare your cherry pie filling^_^ (if you make your own, I suppose you could do it when the cake's in the oven the first time)

Take the cake out of the oven, let cool for five mintes.

Spread cherry filling over the top and serve!
