I'm looking to buy some fleeces once the annual shearings start, and I figured here was as good as anywhere to ask about it. If I'm out of line, feel free to delete me.

If any one knows of any in the Dodge City / Garden City area, that'd be cool too.

You might try calling the county extension office, the SCS office or vets in the area.  I'd think they'd know who has sheep.
I know asking the SCS seems a little weird but my Dad worked for them and knew about every farmer and rancher in the area.

I've called most of the vet offices. They all sent me to this one guy who helped me out.
But I am intrigued by this "SCS office" thing. What does that stand for?

Soil Conservation Service.
I guess they call it the Natural Resources Conservation Service now.
