Yep. That's me.  Or at least, I should say I never seem to eat *enough* vegetables. 

Anyway. Iv'e decided I'm going to remedy this by buying veggies once a week from the farmer's market, cutting them up into bite sized/dippable pieces, and then making some kind of healthy dip each week.

I am in need of (healthy) dip recipes without garlic or onions, as I'm allergic to those, as well as any other ideas you have for getting me to actually eat more vegetables.

I've been a vegetarian for over 10 years, you would think I'd be used to it by now, but I lack motivation to do "real cooking", so I tend to heat soups, and make mac and cheese, potato box mixes, and salads.  Lots and lots of salads.  Oh, and I make squash a lot. 

We also never seem to have fruit in the house, because by the time I get around to eating all of it, it's gone bad since my mom doesn't eat fruit other than grapes and oranges.  Oh, and I can't eat citrus either, and the garlic/onion also excludes anything uber spicy. 

I'm a picky eater due to my allergies and stomach problems to begin with, and then I compound it even more by refusing to eat meat! 



And the allergy to onions and garlic doesn't help, either.

 I don't have any dip recipes, but have you ever considered smoothies? Maybe even green smoothies? That way, you can buy, wash, and then freeze fruit and then blend it with juice. I usually use orange juice, but pineapple juice is yummy, and I think apple juice would be good as well.

 Do you have any cookbooks? Try picking some up for ideas. You may not be vegan, but something like How It All Vegan would be great just as a starting point for ideas. Maybe not exactly what you are asking, but it could help get you more into cooking Smiley

 Do you have any cookbooks? Try picking some up for ideas. You may not be vegan, but something like How It All Vegan would be great just as a starting point for ideas. Maybe not exactly what you are asking, but it could help get you more into cooking Smiley

Almost all the cookbooks I look at have recipies with garlic and onion, and then if you eliminate the garlic/onion, you're left with  a pretty bland meal Sad

Have you tried using flavorful herbs and things like balsamic vinegar or lemon pepper? Oregano and basil are good choices.

ha!  i laughed when i saw the title!  that's so me!  i live on a diet of cheese pizza, grilled cheese, and mac and cheese!  ha!  clearly, i can contibute nothing to this thread.  i buy vegetarian and vegan cookbooks, but just never get around to cooking.  check out 15 minute vegetarian.  it has some quick and easy recipes....just not a quick and easy as chinese food delivery.....

Have you tried easy things like adding peas to your mac n' cheese or mushrooms and olives to a frozen cheese pizza (unless those have garlic in them Huh )?

I also find bagged baby spinach to be a godsend.  You can make the easiest (and tastiest) salad ever by dumping some spinach on a plate, sprinkling on some olive oil and salt and then squeezing a lemon wedge over it.

I sometimes make a miso dressing which uses ginger root as the main flavoring agent.  I don't use a recipe, but I can try to write down quantities for you!  Oh, and maybe hummus without any garlic?

Yeah, I mix peas in with mac & cheese or add some sort of topping to a pizza, but somehow I still feel it's not enough Sad 

thanks for the salad idea - I've got a bag of spinach in my fridge right now I can try it out on! Cheesy

I ididn't think hummus could be made without garlic, any ideas on how?

You could add roasted red peppers or sea salt or chili flakes or something for flavor.
