Although I'm not vegan, I do try to reduce the amount of animal products in my diet. If you have the misconception that vegan food isn't as good as it's animal product cohorts, this recipe will completely change your minds.

It's from the book How it All Vegan (a recipe book that's received mixed reviews) and  they're called Cootie's Coconut Cookies.



And without further ado... the recipe!

They are at their very best when piping hot out of the oven, but are still most delicious cold too!.

2 bananas, mashed  (I like to do 3 bananas... but this does make the cookies a little soft)
1 teaspoon vanilla extract
1/2 cup sweetener ( I typically use brown sugar)
1/2 cup oil (I've had BAD experiences using olive oil, so I advise against olive oil! Grin )
3 teaspoon coconut or soy milk
1 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup rolled oat flakes ( I add a little extra if I use extra banana)
1 cup coconut, shredded

Preheat oven to 350F. In a blender or food processor, blend together the mashed bananas, vanilla, sweetener, oil, and milk. in a large bowl, sift together the flour, baking soda, and cinnamon. Stir in the oat flakes and then fold in the banana mixture, stirring well. Mix in the shredded coconut. Scoop spoon-sized portions onto a lightly oiled cookie sheet and bake for 15-20 minutes.

Makes 12 large delicious cookies, good for all to enjoy!

Sounds scruptious. I'm no longer vegan but I eat about 80% vegan still. Here's my favorite chocolate chip recipe:

1 cup non hydrogenated soy margarine (earth balance, spectrum)
1/4-1/2 cup soymilk
1 - 1 1/2 cups raw sugar (depends on how sweet you like 'em, I like em chocolatey but not sugary)
1-2 teaspoons vanilla

cream together in a bowl.

Add:

1-2 cups chocolate chips, nuts, coconut...
2 teaspoons baking soda
2 1/2 cups unbleached flour

Mix, bake at 350 and enjoy. You can add oats and raisins or cocoa powder and mint extract. be creative these are hard to mess up.

Mmmm, both recipes sound good! I own The Garden of Vegan but not How It All Vegan, unfortunately. I'll have to give these a try Smiley

Awesome recipes, girls!  I'm going to make that chocolate chip one later tonight.  (I use chocolate soymilk and add cocoa to the dough to make them extra scrumptious)  Cheesy
