It's Pancake Day! Anyone got interesting recipes?

So, it's finally Pancake Day which is one of my favourite holidays of the year I found some nice looking recipes on the BBC website here http://www.bbc.co.uk/food/news_and_events/events_pancakeday.shtml , but I was wondering if anyone had anything a bit more fun that they would like to share.

I normally have pancakes with chicken and cheese filling, then ones with ice cream or honey and clotted cream.

ok  never  heard of the  chicken and cheese  ones!! interesting....you have  jsut  opened a  new  world to me!! thanks..I love  pancakes....

my most  favorite "desert"  one was  when mom  would  make  pancakes for breakfast after we had eaten all we  could  she  would  use  any left over batter adn add  butterscotch morsels  and  make those  jsut  like  pancakes.  we  would  snack on those the  rest of the  day!  yummy!

Clipped this out of the newspaper years ago-we all love it.It's even halfway healthy,but the family thinks it's a decadent treat.
Oatmeal pancakes-2 eggs,4 tab. veg.oil,1 3/4 cup buttermilk-I never have buttermilk-I put a spoon or two of white vinegar in regular milk,and let it sit 5 min or so,works fine-,1 cup all purpose flour,1 cup oatmeal(I usually use 1 1/4 oats),3 tab.brown sugar,1/2 tea cinnamon,2 tea. baking powder,1/2 tea. salt,1/2 tea baking soda.
Beat eggs in medium bowl.beat in oil untill well mixed,stir in buttermilk.add rest,stir to blend. Spoon about 1/4 cup onto hot,lightly greased skillet,turn when top covered with bubbles.makes about 15.
If the batter seems a little too thin,add a little more oatmeal or flour.Lately I've been adding in a small,peeled,diced apple-yum.
Syrup or honey is good. When I have some,I defrost a package of frozen strawberries or peaches,and warm them up-better than syrup and butter! Last time I tried canned peaches as an experiment-okay in a pinch.I cut them up,simmered,had to thicken with cornstarch. It was okay,but I think I'll just go with syrup if I don't have fresh or frozen fruit next time.

n update-I actually made these this morning. I used at least 1 1/2 cups oatmeal and half an apple-you want a thick batter,not a runny batter. It made close to 20 fat pancakes,but I make them a little smaller.And the family said-we like the canned peaches-I used a big 1 lb 13 oz can,cut them up,set them to simmer.Mixed couple spoons cornstarch in a little cold water,added a little of the hot peach stuff,them stirred cornstarch mixture into simmering peaches and cooked a little longer. If you want to sprinkle powdered sugar on for decadence,do it right before you stick in that fork to chow down.It absorbs into the topping pretty fast.I still like the other toppings better,but you use what's on hand,right?

We usually make puffed pancakes (recipe if your interested), then mix a few cans of peaches in water (drained), and some raspberries, and fill the puffs.  Divine!

Definitely interested    I've never even heard of puffed pancakes before, but it sounds interesting.

I LOVE adding some applesauce and some cinnomen(sp?) to the "just add water" pancake mix, its yummy
