My mom is so sweet, she always makes stuff for the rest of my family, and another vegan version for me. The other day she made lasagna, so I got this super awesome better than regular lasagna version. I dont know all the specs but I dont think its a real biggie...

... chopped bell peppers (big pieces, red ,yellow), eggplant slices, and canned tomatoes(vegan safe) in between layers of lasagna pasta. and bread crumb (or cracker) pieces on top.... bake it, eat it.  i dont think you can go wrong with this.

awesome leftovers! but it was so good it only lasted me 2 days...

Have you tried making a "cheese" sauce to go with it? I love lasagne, but because I also used to love cheese, I find that I need it. I just make it with nutritional yeast, soymilk, cornflour and vegan margarine.

mm i always made my vegan lagasanga by layering noodles, tofu blended with garlic, a wee bit of nutritional yeast and spinach, and storebought sauce.  sometimes if i'm feeling fancy i'd put roasted veggies in it as well as top it with vegan mozerella.. yummm.

I like to add nutritional yeast and italian spice to my blended tofu and it tastes kinda ricotta cheesey. Vegan lasagna rules.

You're so lucky to have a wonderful mom! My own mom does do that for me, but she likes to complain about my not eating "normal" foods. I just cook most of my own food now, unless she makes somethink like Borscht or bean chili.

I like the idea of mixing tofu with garlic, and making your own cheesy sauce for the top. I'm not vegan, but I try my best to use substitutes. I haven't found nutritional yeast, but I'm thinking about adding that to dad's shopping list.

My favorite lasagna recipe involves using spinach with your "cheese" or tofu filling, as well as some black olives and green peppers.

Pixie skull, you can find nutri yeast at any health food store. Check out the bulk bins or just ask someone. Its pretty much a staple for most health conscious vegans, lotsa b12.

I cant believe no one mentioned using eggplant/zuccini for noodles. My dad is very carb concious, and i only eat freerange eggs, and its fairly hard to find noodles with free range eggs for a good price(north dakota). We always use eggplant for ours and its delicious.

I make mine w/mashed soft tofu (salt/pepper/fresh basil&oregano to taste)...which gives a ricotta cheese feel to the layer.

then noodle...

then soy crumble (fake ground beef style) mixed with marinara sauce

alternate layers...

then on top nutritional yeast cheeze sauce (don't buy brewer's yeast on accident...badbadba d.)

I make this for every potluck or party & even meat lovers are fooled & love it

My question is, to all you vegans, where do you get your noodles for lasagna? Most mainstream noodles are made with eggs. Is there a special kind you buy, or do you have a recipe to make egg free ones?

I love to make noodles from scratch, and am trying to learn all different kinds. Right now, I am working on a good gluten free one, since we discovered my father-in-law is allergic to wheat. I have a recipe for egg free noodles, but I would love to compare and find the best one.
