Okay, I have one more option (I think)....couldn't you also arrange them in a pinwheel fashion, like this:

Wow! Thanks for all of the responses. It looks like #1 and #5 are coming across as winners. They were actually my favorites too. I still have some time to figure it out as I have some more squares to make, but I really appreciate all of your opinions. Tonight I'm off to the fabric store to get more fabric. (I didn't calculate right the first time!) Lucky for me, I have a 50% of coupon, so I'm going to pick up the fabric for the borders and backing too.

That would depend. If you want a more traditional look go with #1. A little more funky go with #5. I like #5.
