 I tend to be on a sugar free diet, becuase sugar is terrible for someone with hypoglycemia... but every once in a while I treat myself.
 After searching around for recipes, I found one on the PPK. I, as usual, did not follow the recipe, so here is my modified version  Smiley


1/4 cup earth balance margarine
1/2 cup applesauce
1/2 oil
1/4 soymilk
1 1/2 peanut butter (I used chunky)
2 cups sugar
4 teaspoons molasses
2 teaspoons vanilla

3 cups oats
2 cups whole wheat flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon cinnamon

350 degress for 12-15 minutes

1. Sift flour, oats, soda, salt and cinnamon. (you can't really 'sift' oats, but whatever =D)
2. Cream peanut butter, margarine, and sugar until well combined. Stir in applesauce, milk and oil. Cream until well combined. Beat in molasses and vanilla. Fold in oat/flour mixture.
3. Drop by rounded spoonfuls onto a cookie sheet. Flatten slightly with a fork.
 *You will have a very thick batter!!! It will not seem like much, but after baking, these cookies are super cute and delicious. Just be sure you store them in an airtight contianer! They were si soft when they came out of the oven, but younger siblings seem unable to close anything  Wink

 They do have twio cups of sugar. They will be sweet, but you could very easily use less sugar. It does have two cups of flour and three cups of oats, and it makes quite a few cookies so it is pretty spread out. But you could very, very easily cut it down Smiley

 Relatively... yes Cheesy They have zero cholesterol becuase of the lack of eggs, and the oats are pretty healthy. You could do a whole wheat/all purpose blend of flour to add extra nutrients.

awesome! i usually cut the sugar in my recipes (i have juvenile diabetes) and they always taste the same. these are definitely on my to-bake list. thanks for sharing Smiley
