This is my first post.......ever........I'm serious.........ever........
LOL, anyway.......I was wondering if anyone knows how to melt marshmallows correctly? Do I just melt them in a pan or can I use the microwave or what?

Yeah, I think it depends on the usage. Plus, marshmellows are hard to melt completely since it'll hardern again given a few seconds....

Maybe marshmallow fluff?  You could probably mix it in with some regular frosting-type ingredients for spreadability (think cream cheese frosting, only with marshmallow fluff).

After you bake the cupcakes immediately put a few marshmallow (mini) over the tops and pop them back in the oven.  After they start to really get puffy (just a few minutes) take them out.  You can't really spread them, you might try to rub some butter on clean hands and use your fingers to smoosh them around.  Butter will keep your hands from sticking .

for rice crispies, you're supposed to melt them in a pan with butter/margarine. I think that could work for cupcakes too. Smiley
