Hi all,

I'm sorry that it took so long for me to post these photos. I tried Photobucket a few times and had no luck, so I just uploaded everything to Flickr and invite you to click the link below to check out the awesome package I received from bunnyboo. If you look at the fourth photo, you should see the recipe that I am sharing (Crispy Oven Fried Fish).
All in all, I had a great experience and cannot wait to participate in another swap.

Thanks!

i, too, apologize for the lack of pictures!  i had kristen81, our lovely organizer for my partner and she really outdid herself!

she was so kind when i mentioned that i already had a recipe box, she made an APRON!  also included were recipe cards ready to be filed in my box, heart shaped measuring cups (not pictured...but you can ALWAYS use more...it seems the one i need is always the one that is dirty!), canadian candy (i am a foreign candy fanatic) including smarties that i had never had (and i ate a box before the picture was taken!), milk chocolate bar and AMAZING toffee (that i shattered on my floor...talk about stress relief smashing something then eating candy)!  and cute foodie stickers.

kristen, i feel like i didnt send enough...i might have to look for you in another swap to make up for it.  thank you soooooooooo much!!!

Kristen81 - I have received, I posted photos on page 16. Varanda hasn't yet as far as I know  Sad. Very worried about that...

Anyways, I forgot to post one of the recipes she sent me so here is a classic from Sweden. I requested it with all my vegetarian recipes.

The World-Famous Swedish Meatballs (serves 4-5)

3/4 dl unsweetened breadcrumbs
1 dl milk
1 dl thick cream
400 grams minced meat
1 1/4 tsp salt
1 1/4 tsp pepper, black or white
2 tbsp chopped yellow onion

1. soak breadcrumbs in milk and cream for 10 minutes.
2. mix minced meat wtih salt, pepper and onion. Add the breadcrumbs mixture and stir until quite smooth.
3. form into small meatballs of uniform size and fry them in butter. When the balls are browned lower the heat so that they have time to get thoroughly cooked.
Shake the pan now and then while frying so the meatballs become round and evenly fried.

Serve with boiled potatoes, brown gravy, green peas and lingonberry jam.

I think my family (dad and husband) will really love it so I'm going to use some free range bison meat to make it tonight for them.

I made the Guinness cake yesterday for my birthday, and it was fantastic. So moist and delicious.... it's definitely a keeper!
