The welsh cakes CAN be made on a hotplate or in an easybake oven! And you can mix everything in bowls with your bare hands if need be. The Welsh cake recipe is so old that it was originally made without anything but ingredients, bowl and hands! I love reclaimation recipes. Here is my absolute favorite. This however requires an oven. Its called Cup Cake.

Mix
1 cup butter
2 cups sugar
3 cups flour
4 eggs

Bake at 350  for 45 minutes.

If you feel like a challange add some extra flavor like a 1/2 tsp of vanilla,
1/2 tsp of ground nutmeg, dried fruit, or anything else that float your boat. I once lowered the flour by a bit and the sugar by a bit and replaced them with unsweetened Cocoa powder. That was good too.

A shot of everything. Its all sitting on a tray cloth she included, which has little sheep along the edges (don't know how well you can see that) one of them is a black sheep. There's a tea infuser, some chocolate (that won't survive beyond today...). Tea from Ireland, a tea cosy and some tea themed notecards

I love your sheep tea cozy! It is so very cute? How did you decide on a sheepy tea theme? I love it. Alice and Wonderland Irish Tea sounds scrumptious as well! OHHH Fun. Now I really can't wait to see what Miss Vicki will think of her goodies... No sheep though sorry Miss Vicki Grin

The sheep theme was a total surprise to me. I collect sheepy things and I had mentioned that on my swap info page. Opening that package and finding all the sheep made my day. I was grinning like a lunatic for hours

That is fine about the sheep Lady Llanalla.  You posted up a Welsh Cake recipe and that has made my day, no frickin' month!  I have been looking for a Welsh Cake recipe for about, oh 14 years or so.  I used to always make these with sultanas in them with my Grandmother whenever I visited her on school holidays.  One year we discovered the recipe had been lost.  We have found a few recipes since, but none that were nice.  She is gonna flip out when I next show up for a visit and announce I'm making Welsh Cakes.  Grin

I have questions though.  I think that what you call all purpose flour, is what I'd call plain flour.  White flour with no rising agents in it, yeah?  Sounds silly to ask, but these things can make a difference sometimes.  Also I am curious about the brown sugar, as I plan to make that shortbread too.  I seem to recall there being something in the 'all these American ingredients are confusing me' thread (or something like that) about brown sugar being different in the US to what it is like in OZ.  Is it moist, or is it granulated like it is here?  Perhaps, to cut out confusion (which is all that other thread left me with), could someone please mention the name of a sugar company/brand (or two) from the US?  Then I could look it up for myself, and hopefully see some pictures.  At this stage I am thinking that demerara should be a good substitute, as it is as brown as I can think of.
