* any flavor of ducan hines cake mix
* 1 and 1/4 cup [10 oz] of your favorite soda

mix together and then bake!

i've done this using classic yellow cake mix and sprite, it was awesome.  the sprite added a little kick to the cupcakes.
-by the way does anyone know any easy vegan icing recipies?

Just be sure to look at the ingredients list on the cake mix box as it appears that only some of the Duncan Hines mixes would qualify as vegan...at least based on what I was able to determine from several online searches just now.

How about a cream cheese-type frosting out of a tofu-based "cream cheese" (Tofutti makes one that's very good)?

Here's a recipe for one that's chocolate (just found it so I can't vouch for the final product, but looks like it'd be good...and I'm afraid you'll have to figure out the conversion from metric, which is how the recipie was written....):
Makes: Enough for a chocolate cake
Cooking Time: 3 minutes

Pour over the cake straightaway, while it's still warm.


25g cocoa
25g vegetable margarine
250g icing sugar
6 tablespoons or more of soya milk
1tsp vanilla essence


1. Melt margarine and add cocoa.  Simmer for a couple of minutes over very low heat.

2. Take off the heat.  Add a couple of tablespoons of soya milk, and begin to add icing sugar through a sieve (or it gets pretty lumpy).

3. Continue to add icing sugar and stir, adding more soya milk as necessary.

4. Stir in vanilla and spread onto cake.

They might be vegan but they still are packed with preservatives, additives and other yucky stuff. Here is an easy cake recipe that you can whip up pretty quickly:

3 cups unbleached flour
2 cups raw sugar
6 Tablespoons cocoa powder (for a chocolate cake)
2 teaspoons baking soda
1 teaspoon salt
3/4 cup oil
2 Tablespoons apple cider vinegar
2 teaspoons vanilla
2 cups soymilk or water

Mix dry ingredients together, add liquids, mix, bake at 350 for 30-40 minutes. Enjoy!! The yummiest cake, better than a box. Leave out the cocoa powder for a vanilla cake. Add different flavorings like almond, lemon...  Remember to use non hydrogenated soy margarine for frostings, hydrogenated oils are BAD for you, linked to heart disease.

speaking of hydrogenated oils, those fake cream cheeses are really bad for you too.  How about fresh berries, or frozen berries heated to make a sauce and served with your favorite rice or soy yougurt or  ice cream?  If I really want to serve some mega dessert, I just melt dark chocolate in a double boiler and pour it over each piece. You can also make old-fashioned style sugar frosting with just powdered sugar and soy or rice milk, really yummy with lemon or orange zest mixed in.
