Ooh. My husband made this the other day & I had a happy mouth! He makes up recipes all the time from whatever we have around. Always vegan of course! Po-thai-to Soup
1 clove garlic (or more to taste)
1 habenero (seeded)
1 large potato
1 can organic corn
1 can organic coconut milk
chili sauce (your favorite brand)
handfull of thai basil & cilantro
garnish of peanuts, carrot slivers, avocado slices
Saute garlic & habenero in limeade for several minutes.
Add chopped potato, coconut milk, corn w/ liquid in can.
Add more limeade to cover potatoes. Add spoon of chili sauce. Cook on medium boil until potatoes reach desired softness (anywhere from 15-30 minutes depending on potato type & size of pieces). Add fresh herbs just before taking off heat.
Garnish just before serving.
