This afternoon, I was in such a cooking mood. I found this recipe in the Dallas Morning News--It just seemed so simple, even I couldn't fail at it.

Cranberry Muffins.


They were delicious.
Here are the ingredients:
2 cups flour
1/2 cup sugar
1 tbsp baking powder
1/2 tsp salt
2/3 cup fresh orange juice (You can taste it in every bite :])
2 eggs, slightly beaten
3 tbsp butter, melted
1 1/4 cup fresh or frozen cranberries

What to do:
Pre-heat oven to 400 degrees (I recommend 350-375). Collect two bowls. One for your liquid ingredients and the other for your dry ingredients. In your bowl of dry ingredients make a little well in the center to pour your liquid ingredients (just a trick of the trade). Then mix until the dry ingredients are just moistened. Then add your cranberries. Just fold them in. Be sure not to over mix. You do want a semi-lumpy batter. Pour into muffin tray (about 2/3 full) or whatever you think is best. Cook for 20-25 minutes.

I was thinking you could try different ingredients. Instead of orange juice use cranberry apple and instead of cranberries use strawberries. I'll be trying something like that soon.

But I must say that were delicious. And I'm very proud! They were super easy!

Those look and sound delicious. I don't bake goodies often but these look too tempting to ignore. I still dunno about the orange juice though, sounds funky.....

Actually, it's what gives it the flavor. I'm sure you could leave it out though.
