This is a recipe I adapted a bit from on I found on www.vegweb.com (a fabulous resource if you've never been there)

-1 1/2 cup chocolate or carob chips (I use about 1 cup chocolate and 1/2 cup carob just because it adds quite a nice flavor) **ghiradelli makes really good vegan chocoalte semi-sweet chips
-1/2 cup peanut butter chunky or creamy (I used reduced fat Skippy but I can imagine that natural would be the best way to go)
-1/2 cup maple syrup (if you used natural peanut butter use 3/4 cup)
-1/4 cup chopped walnuts

mix chips, peanut butter and maple syrup in saucepan on low heat. melt and be sure to stir so it doesn't burn to the bottom of the pan. once everything is melted together add the walnuts, mix together and pour into a baking pan. Sprinkle some walnuts over the top if you would like and then place into fridge/freezer about 30 mins-1 hr or until hardened as you like it. cut and serve.

I just put this together. It hasn't cooled yet, but I licked the spoon and holy cow it is so good. I may be making it in mass quantities for gifts. Thanks so much for the recipe!

oh i'm so gald you liked it! I was impressed because it was made of all ingedients that I had hanging around. and yes, PinkMafia, it does taste a little peanut butteresque but it isn't the dominant flavor, you could totally leave it out if you like Smiley

Oh my gosh you may have saved my life! I just went vegan and the only thing making it tough is all the candy I love has milk chocolate in it. I am making this TOMORROW. You rock!

haha glad to help. i totally understand about the favorite candy thing. all the chocolate out there has milk in it haha. ghiradelli makes really good chocolate chips though. semi sweet. enjoy Smiley and many many congrats on going vegan Cheesy i have a huge collection of recipes if you're ever looking for one
