I'm looking for some low calorie/low fat entrees that I can make fairly quickly and in fairly small portions, as it would be mainly just me eating them so things with 2-3 servings are perfect. Anyone have any ideas? I need ways to encorporate LOTS of veggies into my meals. I already try to eat at least one meal a day that's about 80% veggies but being able to get two in would be fabulous  Smiley

Try some of these... My fave dinner is rice or couscous with fresh veggies & either tofu or beans. I always keep bags of fiesta blend veggies in the freezer -the mix already has the beans in there & you can get out only as much as you want. Give that rice cooker a run for it's money to get in some grains!

Bulgur with chickpeas (or any other bean you want), ,spinach, mushrooms, and garlic
low cal, healthy, easy, and protien
