Risotto is delicious. I had never tried with asparagus. By luck, I have all the ingredients on hand, and even prosciutto eggplant caviar (Oops, I've just seen in I'm in the vegan section!) to accompany eat. One less menu for the week-end to wonder about. Thanks!

Boo MareMare!  I know what it's like to plan to make something then come up an ingredient short. 

Yoopidou, it's a very adaptable recipe.  Even when you feel like going non-vegetarian.

I made mine too! I used mushrooms, spinach, zucchini and sweet potato. So yummy!
