my cooking methods don't focus too much on "new and exciting" foods like the ethnic foods and etc..  but more on "veganize-ing" omni-favorites..  like..   dairy-free mac and cheese, soy-meat lasagna, vegan corndogs..    however, im not sure this is the right route to take with your bf because he will be mentally comparing every taste-sensation to meat..  haha. BUT, my bf went vegan a couple months ago and he super loves it so far.......   one super good cookbook author lady to definitely look up is Bryanna Grogan..

she's prettymuch amazing. ALSOOOO, if you go to http://www.vegsource.com/talk/recipes/index.html  you can ask "Chef Deb" about how to make ANYTHING..   like.. say you super want to make a vegetarian meatloaf but don't have a recipe or don't know of a good one, just post in the msg board asking for one from her and she'll apply within a couple of hours with one. It's really good for those times when you want to try and make something challenging and seemingly impossible like "vegan grilled cheese" and she's NEVER stumped!!

well, i shared with you most of my secrets...  i really want your bf to be successful w/ this transition!! hope this helps !!

 Oh dear, I completely forgot to post recipes Embarrassed
 I don't have time right now to put them up, but a favorite recipe book (where I get many of my favorites) is Vegan Planet by Robin Robinson. The recipes are so delicious, and becuase it is vegan, there is no dairy in them.
 Also, some easy things to make are stirfries and pasta dishes. You cna very easily cook up some veggies and top them with soy sauce and eat them on asian noodles or rice. It is so good! You can do the same thing but italian, just saute veggies put some canned tomato sauce on them and serve over pasta.
 I like to eat Mexican style food, and placing black beans, sauted or steamed veggies, brown rice and salsa in a corn tortilla is great. You can also bake tortillas and eat with the same toppings.
 For very quick foods, cook up some sort of grain (rice, pasta, bulgar, quinoa, etc.) and top with vegetables, beans of your choice, and then put enchilada sauce or tomato sauce over it. Bake at 400 degrees until hot.

 A lot of people come on and start topics asking about how to start becoming a veggie. I thought maybe it would be helpful to organize a list of books, sites, and other esources that you have found helpful.
 If you could post what your favorite places to find recipes and other vegetarian information, I will add it to the list. Please make a note on whether it is vegan or not  Smiley Also, if you want, include a really short note about what the book is about, etc.
 I'll start I guess....

There's a really good vegan cupcake cookbook. It's called "Vegan Cupcakes Take Over the World". Oh and the lady from the Vegan Lunchbox came out with a cookbook!

Vegan Outreach (http://www.veganoutreach.org) is a great site for vegan and vegetarian activism - they have several pamphlets and also a "guide for cruelty free eating" that includes recipes.

Veggie Boards (http://www.veggieboards.com) is a discussion board/forum for vegans, vegetarians, and veg-friendly omnivores. It's a great resource for recipes and also just to have a friendly ear to hear about the obstacles that veg*ns run into because of their lifestyle and dietary choices. There is some heated debate, but they attempt to keep that confined to only a small portion of the site.

Peta (http://www.peta.org) is also a good resource, even though not everyone agrees with their methods. They have recipes and also links to websites that sell veg*n and cruelty-free products.

I'm sure I'll be posting more, but this is all I can think of right away. Oh, and if you want to link with text, all you have to do is click the "Insert Hyperlink" button - that will give you this: [url ][ /url] (without the spaces). To post a link, for instance one to Peta, you would edit it so that it reads: [url =http://www.peta.org]PETA[ /url] (again, without the spaces). Hope that helps!!

as far as books...i like these authors for nicer (but also maybe a little more complicated or labor intensive) recipes:

-erik tucker (chef of millenium vegan restaurant in san fran).  i had a dinner he guest-cheffed (?) for, and it was beautiful as well as delicious!

-deborah madison ("vegetarian cooking for everyone", she has a soup book and probably others too.)

-myra kornfeld (the veluptuous vegan)

-any of the moosewood books
