Great idea.  And if you really wanted to you could stitch the ends to each other and have no knots.  That would be a great way to make up a cloth "yarn" ball.

Thanks everyone!  I think this took around 12 or 15 scarves...I don't recall exactly.  The scarves vary a lot in size, of course, and you have to vary the width of your strips to accommodate the density of the weave, so that the strips are all even.  Stitching the scarf strips together would totally work, too--though the crochet stitch is large enough that you can't notice in of the knots in this one.  Especially because every "corner" where you turn in the scarf creates a small bump; the texture is overall a bit uneven, so things like knots or even splices would just blend in.
