Hi,

I am addicted to these mock tuna melt sandwiches at a local cafe and really need a good recipe to make my own! They are 6$ each!! They have some celery and onion in them and are just AMAZING--my meat-eating boyfriend splits them with me a lot of the time. A good recipe would be MUCH appriciated. I tried a chickpea version, but I think they use tempeh.


ps For anyone in Portland, OR I'm talking about the Red and Black. I'm getting so hungry writing this.

Have you tried TUNO?  Most people think it is pretty nasty, but if you rinse it realy good when you open the can and then add just a touch of mayo (vegenaise) and the veggies you want, it should make a good sandwich.

of course it's all raw but adapt it to suit your eating habits. there are some really good mockfish recipes there. most of them have seaweed of some sort in them (there are so many kinds!) for the fishy flavour which has the happy extra effect of being unbelievably healthy for you.

not4profit: I never heard of tuno but with mayo i bet it would be good--i secretly like mayo in my sandwiches Grin

monkey: seaweed is an awesome idea. I have kelp powder... I wonder if that will come in handy. hopefully I can make some good cheap fare when i get back from vacation!

I recall a vegetarian times article from about 10 years ago that suggested you drain and then freeze the tofu - supposed to give a nice crumbled texture...
