I made a large Quiche to take over to my BF's mom's for Christmas breakfast.  They loved it.  There wasn't a crumb left and it was so easy!
I used a pie dish for a rathar large quiche, but you can use ramikins, or even cupcake tins for smaller quantities, and it freezes and refrigerates well.

Add 6 scrambled eggs
about 1/4 cup of milk
salt/pepper to taste
chopped fresh baby spinich
chopped green onion
chopped red onion
chopped bell pepper
chopped ham or sausage
shredded pepperjack cheese

coat pie dish with olive oil or shortening, add mixed ingrediants.  Sprinkle extra cheese over top and bake at 350 for about 25-30 minutes or until knife comes out clean.  Let cool and serve with salsa.  Its so easy and you don't really need to measure just add till it looks good.  It'll impress your parents and they'll think you slaved over it.  Plus when you tell people you'll bring a quiche they think you can cook;-)

i also make this easy cheese quiche:

- one slab of ready made puff pastry
- 4 different kinds of cheese- grated
- 1/2 cup milk
- pinch of salt
- one egg
- some chopped parsley or corriander, or frech   thyme

- roll the dough and place it in a buttered pie tin.
- mix all the cheese and parsley and place in the pie crust.
- whisk the milk, egg and salt and pour over cheese mixture.
- bake in a medium heated oven until golden it's in color.
