I love to raoast a huge pan of veggies.
Onions, sweet potatoes, grean beans, garlic, ect.
HTen have one night with rice, another over a big greeen salad.

Roasted squash stuffed with rice, tomote sauce, bread crums & cheese.

stuffed peppers freeze well & re heat well.

My friend just made the best meal in our dorm's kitchen the other day! It was cous cous with crumbled feta cheese, some garlic, and chops of onion, green pepper, & cucumber. It was sooo good!
She said she usually uses something besides cucumbers (can't recall at the moment), but accidently grabbed them. She also said that red peppers make the dish really pretty, but they're much more expense than green ones.
I just went out and bought the stuff to make it myself!

Eggplant Parmesan is our favorite veggie dish.  Peel and slice a large eggplant, dip in beaten egg, then in Progresso Italian Bread Crumbs, then fry in batches in olive oil until each slice is soft.

Layer in a big lasagna pan: sauce, fried eggplant, sauce, mozzarella, etc. Top with some grated parmesan and bake for about an hour.
