Well, not quite an emergency but I absolutely need a good recipe for the filling in a chicken salad sandwich!  It's one of my favourite foods and I just can't seem to get it right.  Cafeterias always have the super most awesomest ones but everytime I try to make one it tastes like yuck.  I really want it to taste like the ones in cafeterias (or restaurants) - can you tell me how?  I will love you forever  Grin.

I like to put apples nuts and celery in there for crunch along with the chicken and mayo and pepper (sometimes I use lemon pepper)

I am not sure if this will help but cafeteria chicken salad is usually made with Turkey.

I usually mix curry powder in with the mayo and it makes an UBER tasty chicky salad.

there's a really good recipe in martha stewart's hors d'oeuvres book.  you poach the chicken breasts in chicken stock (keeps them moist & yummy)  and then shred it with some FRESH tarragon (do not use that old powdered crap), good mayo (hellman's or best foods..depending on your coast), sea salt & pepper.  it's all about using good ingredients.
her recipe makes finger sandwiches & she rolls the outside, crust-less parto of the sandwiches in slivered almonds.

My favorite is made with hellman's mayo, chopped celery, chopped cashews and dried cranberries. YUM!

Sometimes I make mine with chicken, mayo, shredded cheddar cheese, and a little bit of ranch dressing mix.  It adds a little zing and takes the mayo-ey taste out.

i'm make mine with red onion, celery, grilled chicken, mayo, salt, pepper, and a tiny pinch of garic powder. i usually eat it in whole wheat pitas or on toast. delicious.

I usually make mine with chicken (of course), mayo, grapes, a teeny bit of celery, and chopped walnuts. If I'm feeling extra fancy, I'll add curry powder or a squirt of a good, grainy mustard.

ilovepaper, your recipe with cashews and dried cranberries sounds fantastic! I'm definitely going to have to try that sometime. Like, as in dinner. Tonight.  Cheesy

I love craftster so much that I am going to reveal my super secret chicken and tuna salad ingredient........drum roll please.......[glow=red,2,300]MINCED FRESH PARSLEY!![/glow]!!!  Tah dah! 

I know it doesn't sound like much but it really packs a great flavor punch...........but it must be fresh.  I also mix dijon mustard into the mayo before hand.
