vegan portabello "sausage" ziti bake

had mushrooms laying around from farmers market---took 4 large mushrooms 1 red onion and crushed tomatoes--added 4 sliced tofurky tomato sausages---cooked ziti-mixed it all together--topped with follow your heart mozzerella cheese and breadcrumbs

i've never seen tofurkey tomato sausages which is kind of weird considering we have all sorts of tofurkey stuff here. that said i totally want to eat this now so i'm going to get whatever else kind of sausage i can find or just add marinated crumbled tofu.
and now i'm off to the market to buy some 'cheese'.
