here is my favourite recipie for chilli bean salad! yummy! everytime i bring this salad to a potluck, it gets rave reviews.

Chilli Bean Salad

2 cans Kidney Beans
1 can Romano Beans
green pepper diced
1 small red onion diced
1/3 cup vegetable oil
4 tsp chilli powder
3 tbs vinegar
1 tsp sugar
tsp salt

heat chilli powder and oil in a sauce pan for 2 min. remove from heat stir in vinegar, sugar, onions and salt. Stir into drained beans in a large serving bowl. Refrigerate for 10 min. stir in green pepper, mix, serve.

and really, you can change it up as much as you want. sometimes i use red onions sometimes white, whatever i have on hand. Two quick tips: 1) make sure the oil isn't too hot, otherwise you'll scorch the chilli powder and 2) i like serving the salad at room temperature, or even slightly warmer it draws out the flavours better.

Just to avoid confusion:  Haricot beans are white all over - they're the kind in baked beans.  I know the kind you mean though, with the red flecks.  I just don't know what they're called!  But does it matter that much?  Go shopping, find the beans with the red flecks, and buy them! Wink
