I made these little beauties tonight for a beach trip tomorrow. This is the best recipe EVER for coconut macaroons. Seriously, these are so super easy and everyone always loves them. It's Ina Garten's recipe -
14 oz. sweetened shredded coconut
14 oz. sweetened condensed milk
1 tsp. vanilla extract
2 extra large egg whites, at room temp
1/4 tsp. salt
Preheat oven to 325. In a medium bowl, mix coconut, condensed milk and vanilla. In a smaller bowl, beat egg whites and salt until medium firm peaks form. Fold the egg whites into the coconut mixture. Use an ice cream scoop to scoop mixture on to cookie sheet lined with parchment paper. Bake for 20-25 minutes until golden brown. Cool and serve. Makes about 16 macaroons.
