Here's a cake I made for my bestfriend's birthday. We're in France, and she asked me for an "American Cake" meaning lots of color and icings !

So I made a lemon sponge cake, two layers (I wanted three, but I over did one layer so just stuck with two), with home-made lemon curd as filling (I put a pretty thin layer, because curd is kind of sour) and I made a cooked icing for the top, but because it seemed kind of liquid, I added a layer of whipped cream on top, to cover the whole of the cake. This was actually a great thing to do, it made a Mousse-like icing in the end. I colored the top icing really yellow...

I then made some roses from marzipan, and my boyfriend made the leaves (had to let him participate or he would sulk !). Did some extra decorating (check out the pea like thingies on the side of the cake !)

I pretty proud of this cake, because I'm not really good at icings... they always seem to either melt or be too sweet !

My best friend was *really* happy !
