baked potatoes. prick a potato with a fork and throw it in the microwave for 3-5 min. i top mine with olive oil, garlic salt, pepper, etc. soo yum.

rumpunzel & hp_nerd--the tortillas were actually super easy to make. the dough is really simple. rolling it out can be a little hard but this is the technique i used. flour a piece of parchment paper and roll the dough out on that. then, with the paper still attached, flip it onto your griddle. once it cooks though a little bit, the parchment paper will peel right off. this way you can get super thin tortillas.

the recipe for the salad was really easy.
1 can of black beans
1 can of corn
1 bell pepper
juice from half a lime
a handful of parsely or cilantro
a dash or two of cumin
salt n pep

sour cream
6 oz silken tofu
1 tbs lemon
1 tbs oil
salt to taste

whiz it in the food processor until smooth and creamy

so tonight i did up some taco-y wraps. so yum

behold the homemade whole wheat tortillas, homemade salad filling (black beans, corn, pepper, cumin, lime etc. sooooo yum), and the homemade vegan sour cream. all from the lovins of my heart. it was so good too. i can give recipes if anyoone wants.

so awesome. im a guada collector and once i came upon one of those hommies machines with the saints in it. i literally used up $6.50 trying to get guada. now i have roughly 8 jesuses left after giving some marys away.

well pastries such as muffins n cookies n scones are pretty simple to veganify or find vegan recipes for. the more traditional and intense pastries, think french croissants etc, may be a little harder to make. www.theppk.com is a good start for the basics like choc chip cookies (have made these before and they are amazing!) and banana bread (again, heavenly). vegan baking is alllll about trial and error, so save your best chocolate chips and whatnot for recipes you know will work.
i recommend Vegan with a Vengeance and Vegan Cupcakes Take Over The World, both by isa chandra moskowitz, for easy and delish recipes for cupcakes n shit like blackbottom no bake peanut butter and chocolate pie (so freakin good).
ive never really made any of the more complicated traditional pastries vegan so i dont really know about that kinda thing.
