I invented this on Sunday because I was lazy. I don't know if it's even really a stew, but it's easy and yummy and it works. Maybe next time I will make it on a day it is not 95 degrees outside.

I'm sure a non vegetarian version would be easy to make too.
Ingredients (pictured)

-1 bag of frozen stew vegetables. My bag o' veggies had onions, potatoes, carrots, and celery.
-1 bag of frozen broccoli. I like broccoli florets but there was a sale on the ones with the stalks attatched. Im a sucker for cheap.
-1 can of corn, drained
-1 veggie boullion cube
-2 cans of vegetable broth
-1 1/2 cans of water
-seasoning salt (season to taste)
-pico de gallo powder (season to taste... it was in my cabinet so i tried it

)
-1 cup uncooked brown rice (which I believe equals 3 cups cooked rice)
Lazy cooking directions:
1) Make the rice according to the instructions on the bag. The rice I used took about 45-50 mins to cook.
2)While the rice is cooking, throw the remaining ingredients (minus seasoning and pico de gallo) in a big pot. Cover and leave it on medium-ish heat. Stir every once and a while, but you don't have to stand over it or anything
3) When the rice has 10-15 minutes remaining, season your stew. It should be simmering, if not, up the heat before seasoning.
4) When the rice is ready, throw it in the stew. Stir it all up. Then eat. yay!

Any comments or suggestions are welcome. I kinda made this up as I went along so Im sure there's probably a way to cook the rice IN the stew and stuff, but I have no idea how
