After volunteering to make Valentines for my sons entire elementary school staff, I kicked out about 50 of these in a snap! Super fun and easy. Directions are posted on my blog but I'm pretty sure I got the idea from an old Martha Stewart kids so surely on her site as well. What do ya think?

I've been giving my fam way too much cold cereal lately. Need to spend this afternoon making up a triple batch of Freezer French Toast! My freezer is sometimes stocked with things I can grab, heat, and serve. When it is, this is usually in there:

Freezer French Toast
4 eggs
1 cup milk
1 tsp vanilla
1 tsp cinnamon
10 slices day old French bread (3/4 inch thick)
1-2 tbs butter

Beat eggs, milk, vanilla, and cinnamon together in a bowl, place bread in a well greased 13x9 baking pan, pour egg mixture over bread. Let soak for several minutes, turning bread once to coat. Freeze until firm, store in an airtight container. To bake place frozen bread on a well greased baking sheet, dot with butter, bake at 450 for 7 minutes, turn and bake 10-12 minutes longer.

My new favorite quick and yummy soup! Add sausage if you'd like or switch the broth to vegetable broth and it's vegetarian. I skip the blender part but to each their own. Enjoy!

Black Bean Soup with Salsa   
Serves 4, Prep: 5 minutes Ready in: 35 minutes
INGREDIENTS:
2 tablespoons olive oil
1 1/2 cups diced onion
1 green bell pepper, cut into medium dice
3 garlic cloves, minced
1 tablespoon ground cumin   
2 (15.5 ounce) cans black beans, drained
3 cups chicken broth, divided
Salt and ground black pepper, to taste
1/4 cup low-fat sour cream
1/4 cup prepared salsa

DIRECTIONS:
1.   Heat oil in a soup pot over low heat while chopping the vegetables. Increase heat to medium-high and stir in onion and green pepper. Saute until tender; about 5 minutes. Stir in garlic and cumin and saute until fragrant; about 1 minute.
2.   Stir in beans and 2 1/2 cups chicken broth. Season with salt and pepper and simmer for 15 minutes.
3.   Pour black bean mixture into a blender. Making sure to remove canister cap for steam to escape, puree until smooth; about 30 seconds.
4.   Return soup to pot, stir in remaining broth and heat through. Ladle a portion of soup into each bowl. Garnish with sour cream and salsa and serve.
