If you use the juice from the thawed berries you can make the pancakes purple.  Maybe that can work to your advantage.  Tell her it is a special purple pancake for her.

I been wanting to make these for a long time.  I made them last week.  They came out really good, and tasted just like english muffins you get in the store.


I tried my hand at English Muffins when I realized the brand available here in Costa Rica had something like 30% of your daily sodium in one muffin.   Since then I've never looked back.  Homemade English Muffins are the best!  I use a whole wheat recipe and often whip up a batch of homemade jam the same day.  What's a toasted muffin without jam?

Yesterday morning I whipped up a batch of my scrum-dely-icious Whole Wheat Blueberry-Banana Nut Pancakes.  These are a great morning treat.  And bonus it is healthy! 

The pancakes are a healthy treat which include fiber rich whole wheat flour, hearty healthy almonds, anti-oxidant packed blueberries and bananas.  I also use egg white to decrease the overall cholesterol.     

I wish I had more pictures but we were so busy eating we forgot to take more pics.   

    1 cup whole wheat flour
    1/4 cup all purpose flour
    2 teaspoons baking powder
    1 mashed banana
    1 egg white
    1 cup soy milk (or use regular milk if you are one of those lucky lactose tolerant people)
    1 tsp vanilla
    Pinch of raw sugar
    1/2 cup almond slices
    1/3 fresh or thawed frozen blueberries

Mix dry ingredients in a small bowl.  In another bowl mix wet ingredients and add the dry ingredients.  Cook pancakes on a hot griddle and enjoy with maple syrup.

After re-reading the replies and giving things some thought, I decided that you guys are right there should be a pop of color.  So after careful consideration I have decided on a muted dusty orange tone.  So today I am off to a fabric shop to see what I can find for pillows.  Wish me luck!

Interesting ideas.  We do have lots of bold colors in Costa Rica.   My other bedroom is very vibrant so in this one I wanted to use a more tranquil and muted color scheme.  But I think bringing nature in is a great idea.  Why not use the shapes of the flora and fauna but with these lighter shades?  That could be very interesting.

I love the lamps as they are.  They cast a warm light when lit and light up the crystal base.  But I think pillows are needed.  I was thinking of knitting some that have a rustic feel but have yet to find a pattern or invent one. 

Art above the bed is a must.  But we are in earthquake country so we are hesitant to put something huge and heavy up.  So silly, I know.

You must have been reading my mind because I was thinking plant also.  A lovely full tall plant would bring a little color and liven up the area.
