I think you need to just keep talking about it to her until she becomes more comfortable with it. Show her aother men who knit who are married, lots of men spin also.

Get her to realize it's not that weird, it's awful not having your loved one understand or support you! I'm sure you can eventually have her "get it". Lots of men are extremly good seamstresses, seamsters?? lol

in my experience 150 yards is not enough for much besides scarf, small hat, fingerless gloves etc.

It's cotton, and cotton stretches. Go to knitpicks and see if they have a 100% cotton yarn in a similar gauge!

Okay I think I want to knit this, but it appears to be about 19 inches long. Has anyone altered it to be 21 inches long?

I was thinking of using Rowan Cotton Wool. I have wanted to use this wool for something and keep going back and forth what to work it for, this appears to be around about the right gauge for that yarn.
