I received, I received, I received from Gothmom!! She sent the best package ever! Me and my roommates busted into it like children on Christmas morning! I got tons of kitchen supplies (I didn't know I was going to have a kitchen) and extra goodies like fabric, jello, some cute leather roses, and handmade potholders! I loved everything. I have a pretty traditional Mexican version make with dry red chilies.
You boil the chilies in a pot of water till they get soft, the you throw them in the blender with about a can of tomato sauce. Once that is blended really well, strain it. This is your sauce. Have a saucepan with about 1,2 inch of hot oil ready, and have a sauce pan(or pot ) with you sauce in it. Also have a bowl of grated cheese ready. Here is the part I struggle with. You put your corn tortilla in the hot oil and flip it so both sides are a bit cooked, don't let it get hard, but at the same time, it can't be to soft. You immediately take it out of the oil and lightly dip it into the sauce. Just coat the tortilla, or I guarantee you, it will tear! Then you put it on a plate, add some cheese, roll it up,add some more sauce, and more cheese, then eat! My mom makes these every week and only when I'm forced to, do i ever cook them.
