If you think the problem with the zippers is caused by shrinkage, you could wash the material before you begin your project to "preshrink" the fabric.  I can't really think of a reason not to use buttons, though.  (Except that buttonholes are  a real pain.)  In fact, it could be pretty cute!  Good luck with your experiment.

I agree with Sarah on all her blocking/not-blocking advice.  But frankly, it doesn't look like your scarf needs much help.  You did a great job, and any minor irregularities add to its charm as a handknit.
