There is that - I have a few recipes pinned to try - they look like they could be made more with nuts that are processed quite finely - like almond flour, so they may hold. I will definitely give it a try when I get a chance to go and pick up some almond flour and coconut flour and update my blog and this post. Goodness knows, Jim will be happy - especially if it can be a savoury crust too - he is missing things like chicken pot pie!
I was thinking that too over the weekend, as Jim was asking if he could have one. Pilsbury makes a GF pastry dough that could be rolled out. I was also thinking that there are GF graham crackers and a graham cracker crust could work also that could be yummy.
Paleo nut crusts, or nut/coconut crusts would work too as a GF option, and would be delicious with the lemon and berries. But I have not tried to make a home-made GF option for pie crusts yet. I liked the convenience of the premade tarts. I wondered if a rice shortbread dough would work also, but wondered how soggy it would get if the tarts are made too far in advance.
I was annoyed when I unrolled a piece of art canvas I bought at a local art store tent sale. It was prepped canvas and I was hoping for unprepped... except now I think I may be able to use it for some pages or covers for this journal!
