21  fun day of christmas baking! (recipes added!!) in Winter Holidays by nykole6412 on: December 16, 2007 06:11:47 PM
today i babysat 2 of my little cousins...so what should we do? make christmas cookies!!!!!
 then the kiddies watched grinch while i made chocolate biscotti with peppermint white  chocolate chips  and holiday biscotti with orange zest, pistatios and craisins!!!!

i also made peppermint bark but my cell died and that's the only camara i have right now!

 Today was a fun day!!!!

















Holiday Biscotti

INGREDIENTS:

1/2 cup butter or margarine,
softened
1 cup sugar
3 eggs
2 teaspoons vanilla extract
1 teaspoon orange extract
3 cups all-purpose flour

2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup dried cranberries,

coarsley chopped

2/3 cup pistachios, coarsely
chopped
2 tablespoons grated orange peel

DIRECTIONS:

1. In a mixing bowl, cream butter and sugar. Add eggs, one at a time,
beating well after each addition. Stir in extracts. Combine flour, baking
powder and salt; gradually add to creamed mixture and mix well (dough
will be sticky). Stir in cranberries, pistachios and orange peel. Chill for 30
minutes.
2. Divide dough in half. On a floured surface, shape each half into a loaf
1-1/2 to 2-in. diameter. Place on an ungreased baking sheet. Bake at
350 degrees F for 30-35 minutes.
3. Cool for 5 minutes. Cut diagonally into 3/4-in. thick slices. Place slices,
cut side down, on an ungreased baking sheet. Bake for 9-10 minutes.
Turn slices over. Bake 10 minutes more or until golden brown. Cool on
wire rack. Store in an airtight container.


Chocolate peppermint biscotti
INGREDIENTS:
   5 cups flour
   1 1/2 cups cocoa powder
   2 tbs baking powder
   1 cup butter
   2 cups sugar
   6 eggs
   1 tbs vanilla extract
   2tsp peppermint extract
   2 cups chocolate chips (I used these peppermint white choc thingies I found at world market)

PREPARATION:
Preheat oven to 400F. Cream sugar and butter. Beat in eggs, one at a time, until smooth and add vanilla extract. Sift together the dry ingredients and add to the egg mixture. Stir in chocolate chips.
Shape the dough into 6 longs loaves and brush with beaten egg yolk. Bake for 25 minutes. Remove from oven and let cool completely. Cut each loaf into 1 inch slices and place back on baking sheet. Reduce heat to 350F and place slices back into the oven. Bake for another 10 minutes, then remove from the oven and cool.

i was craving fast food.......so i searched my fridge and cubbards and made a grilled stuffed burrito!  sun dried tomato tortilla, leftover chicken and leftover brown rice plus beans, cheese and salsa!!!  i grilled it on my little george foreman grill! yay!!!

ok so i was trying to make the panta or the calio thingy lol sorry i dont remember what its called........so what do you think?  im kinda new at crochet and ya its kinda bumpy and uneven.....but its the first thing ive done without following a pattern!!! Smiley   oh also i forgot to put a button hole........is it too late?  i mean is there anything i can do without redoing it?

and the girl i am a nanny for wanted a beanie for when she figure skates.....yes ice rinks in phoenix baffles my mind too........but here's what i came up with.......i dont know if its my computer..but it looks grayish to me...in real life its bright purple with black stripes.

ok so im getting ready for bed.....walk through my living room and i find a horrible horrible scorpion! (im new to AZ.........and i guess alot of scorpions are in my area...last time i found one i called the maintenance guy and made him come get it and he called me a wuss!!!  LOL)  ok so obviously i cannot sleep (i have the craziest fear of scorpions) so i decide to make a beanie and scarf out of some soft fuzzy yarn someone gave me!!!  what do you think???
 
oh ya i killed the scorp here he is!!







im going to send it to my sis in northern cali cuz obviously you dont need beanies an scarves here in AZ!!!!!!!!! LOL
