What you are making is a hole in the knitting. You could use any cast on and put the newly cast on stitches on the right needle.  The directions may sound funky at first but keep on working with it and you will see in a few rows that what yuo did actually just made the hole and you are kniting back to normal.

Knitting  2 socks at once. I tried it once and had a big mess, but I didn't use the noste things either.

I would go with manly chunky yarn and maybe an easy cable around the edge. make a rectangular shape and maybe add a chunky button to one end so you could use it as a lap afghan and and a wrap.  Plus if you use chunky yarn and big needles it would knit up fast!

I found this page that has a square that looks a lot like the squares in the purse.

maybe you could use this to figure out stitch counts for the individual squares.

I think you would make the individual squares and then somehow join them in the corners.
